So Angel’s family is coming in to town on the Friday and we just found out that his mother and her husband are both definitely coming too! We’re going to have a full house! With the excitement of having family in town, it makes me think of things to make for breakfast, lunch and dinner that everyone who isn’t Paleo can enjoy.
This is a recent recipe that I really enjoy. The pancakes are fluffy and they don’t fall apart like other Paleo Pancakes. My favorite is with maple syrup (just a little) and fresh cut strawberries. Mmmmm! I hope you enjoy!
Recipe: Fluffy Paleo Pancakes
Ingredients
- 2 large Eggs
- 1/3 cup Maple Syrup
- 1 Tbsp Vanilla Extract
- ¼ cup Water
- 2 Tbsp Coconut Oil
- ½ tsp Coarse Sea Salt
- ¼ cup Golden Flaxseed Meal
- 1 ¼ cup Almond Flour
- ½ tsp Baking Powder
- 1 Tbsp Arrowroot Powder
- Coconut Oil
Instructions
- Combine the eggs, maple syrup, vanilla extract, water, coconut oil (liquified) and sea salt and mix until incorporated. In a separate bowl, flaxseed, almond flour, baking powder and arrowroot powder and mix until combined. …or if you are lazy, like me in the morning, just put all of the ingredients in a blender and go to town. Heat a skillet over medium-low (on my oven, a 4), THEN add a tablespoon of coconut oil.
- Make smaller pancakes – the larger you make these, the harder they will be to flip. It only takes a couple of minutes on each side – just make sure that they are a golden brown on each side and you’re ready to eat! NOTE: We heat a tablespoon of coconut oil for every set of pancakes we make. It makes them a little crispy on the edges and we like that.
- They already have maple syrup in them, so they are nice and sweet! We like to top ours with fresh blueberries or fruit.
