Paleo Balsamic Roasted Beet Salad with Watercress

This Paleo Balsamic Roasted Beet Salad is made with both golden and red beets, our homemade Paleo Balsamic Glaze and Paleo Bright Pesto Sauce, pepitas and watercress. We love beets this time of year, when they are in season. They’re plump, tender and awesome, sweet and delicious. This salad is something similar to something I had at a restaurant a while ago and liked it so much, I thought I’d make a Paleo version so that we could share! The golden beets are so sweet right now, and this is so easy to make once you have all of the ingredients. The Paleo Bright Pesto Sauce and Paleo Balsamic Glaze keep well, but you won’t need a whole batch for this by far. If you don’t want to have the extra, just cut those recipes in half.

Recipe: Paleo Balsamic Roasted Beet Salad

  1. Roast the Paleo Roasted Beets according to the directions HERE.
  2. While the Paleo Roasted Beets beets are roasting, make the Paleo Bright Pesto Sauce according to the directions HERE.
  3. And when you’re done with the Paleo Bright Pesto Sauce, make the Paleo Balsamic Glaze according to the directions HERE.
  4. When the beets are tender, take them out of the oven, plate them, then dress them lightly with Paleo Balsamic Glaze and Paleo Bright Pesto Sauce, sprinkle over with toasted pepitas and watercress. I go easy on the sauces, as I like it with just a little flavor, but that’s just my personal preference.
  5. This recipe is Vegan!
