Paleo Banana Bread, A Baked Breakfast Bread

A great Paleo Banana Bread recipe is made of fresh, ripe bananas, vanilla and honey and it moist and fluffy…perfect for breakfast on the go! We feel it’s a staple baked breakfast item for those days when you don’t have time to cook, but need a little fuel. And its not just for breakfast…we like it for a snack as well! It is very dense, but packed full of good stuff like potassium, and protein. Pictured is our banana bread without the blueberries, but when they are in season, we personally like to add them, as it gives the recipe a little tart contrast.

Oh my goodness, the weather this weekend is absolutely perfect! We opened the windows and the back door to the house and Chance (our dog) is in heaven! He’s been running in and out all morning like a little monkey! On days like today, I love to let in the natural light and make a big brunch for Angel and I so that we can get outside with Chance and expend a lot of pent up energy.

Recipe: Paleo Banana Bread

Ingredients

  • 2 very ripe Bananas
  • ¼ cup raw Honey
  • ¼ cup unsweetened Applesauce
  • 1 Tbsp Coconut Oil
  • 1 tsp Vanilla Extract
  • 2 Eggs
  • 1 cup Almond Flour
  • 1/3 cup Golden Flaxseed Meal
  • 1/3 cup Coconut Flour
  • 1 tsp Lemon Juice
  • 1 tsp Baking Soda
  • ½ tsp ground Cinnamon
  • Pinch of Coarse Sea Salt
  • Optional: ½ cup Blueberries
  • Optional: Walnuts or Almonds to top

Instructions

  • Preheat the oven to 325 degrees Fahrenheit.
  • Mash the bananas, then add the honey, applesauce, coconut oil, vanilla, and lemon juice. Whisk in the eggs.
  • In other bowl, sift together the almond flour, golden flaxseed meal, coconut flour, baking soda, cinnamon, sea salt and blueberries (if you’re using them). Fold these dry ingredients into the wet egg mixture and fold gently until incorporated.
  • Bake, uncovered, in a greased loaf pan (ours is metal, about 9” x 5”) for 1 hour. Watch it at around 45 minutes, you may need to cover it with tin foil to keep the top from getting too dark. Test by poking a toothpick into the middle. If it comes out clean and not wet, the bread is finished.
  • This recipe is Vegetarian!
