Paleo Berry Trifle, A Red White & Blue Dessert

This recipe for Paleo Berry Trifle is a beautiful dessert make with fluffy, moist Paleo Vanilla Pound Cake, Paleo Banana Pudding, fresh strawberries and blueberries and coconut milk! It’s a really beautiful and delicate dessert that’s perfect for a baby or wedding shower, and easy to make in mass quantities if need be. The contrast of flavors, sweet and tangy cake and berries and the creamy coconut milk really bring everything together. We suggest that you use a full-fat coconut milk, or it tends to be a little watery…word to the wise!

  • We like to make the pudding the night before, so its nice and set, but if you didn’t, that’s ok. Just make the banana pudding recipe according to the directions here and refrigerate it.
  • Again, you can make the cake recipe the night before, but if you didn’t, make the vanilla pound cake according to the directions here. Set aside to cool.
  • While the cake is cooling, combine the diced and hulled strawberries, 1 tablespoon arrowroot powder, 1 teaspoon vanilla extract, 1 teaspoon lemon juice and 2 tablespoons maple syrup in a sauce pan. Make sure the strawberries are coated and all ingredients are incorporated.
  • Heat over medium-low (~4) heat and stir until the mixture has a thickened glaze texture. Remove from the heat.
  • Next, combine the blueberries, 1 tablespoon arrowroot powder, 1 teaspoon vanilla extract, 1 teaspoon lemon juice and 2 tablespoons maple syrup in a sauce pan. Make sure the blueberries are coated and all ingredients are incorporated.
  • Heat over medium-low (~4) heat and stir until the mixture has a thickened glaze texture. Remove from the heat.
  • If your banana pudding is set, mix it with equal parts of thick, canned coconut milk. If you don’t have the thick kind, don’t worry about it at all.
  • Next, dice the pound cake. Now’s the time we layer. Layer pound cake, strawberries, pudding, blueberries…or any other combination you’d like.
  • Refrigerate until read to serve!
