Paleo Cabbage & Kale Coleslaw, A Vegetarian Side

This recipe for Paleo Cabbage & Kale Coleslaw is fresh and light, seasoned with Paleo Mayo, raw honey, cilantro, cumin and celery seed with dried cranberries. I created this Paleo Cabbage & Kale Coleslaw after going to Honey Butter Fried Chicken, in Chicago, IL. Even though not Paleo, all of their food is from artisan farms, with antibiotic-free Amish chicken. If you’re looking for a treat, this place has a really high quality of food and a cool, local feel. Anyway, they had this kickin’ coleslaw that had dried pomegranates and I thought it was so good, I came home and made my own Paleo version for Angel! No typos below, you do not have to add any sea salt at all, the vinegar will handle that flavor palate. And don’t worry, we made a Paleo Honey Fried Chicken recipe to go with it…pair that with some Paleo Mashed No-Tatoes and you’re good to go!

The second day in Chicago, we went to the Field Museum, where we saw the dinosaur fossils and ancient Egyptians, and then the Art Institute, where we saw Van Gogh to Picasso and a special Magritte exhibit, which was just fantastic. I haven’t seen much art lately, so being able to see the Art Institute of Chicago AND the Salvador Dali Museum with a special exhibit by Andy Warhol all in the same year is a real treat! I really do love fine art, I wish I had more time to create…at least I have the kitchen!

Recipe: Paleo Cabbage & Kale Coleslaw

Ingredients

  • 3 cups Cabbage
  • 1 ½ cup Kale
  • 1 Carrot
  • 1/3 cup dried Cranberries
  • 1 Tbsp raw Honey
  • ¼ cup Coconut Vinegar
  • ¼ cup Paleo Mayo
  • ¼ cup fresh Cilantro
  • ½ tsp ground Cumin
  • ½ tsp ground Paprika
  • ¼ tsp ground White Pepper
  • ½ tsp dried Celery Seed

Instructions

  • Shred the cabbage, kale, and carrot. Toss the shredded veggies with the cranberries and chopped cilantro.
  • In another bowl, combine the honey, coconut vinegar, Paleo Mayo, cumin, paprika, white pepper, and celery seed.
  • This recipe is Vegetarian!
