This recipe for Paleo Chicken Fried “Rice” is something that Angel loves. Being from PR, where they eat a TON of rice, I think he misses it sometimes. We make this when we want to do Paleo Ginger Shrimp or our Paleo General Tso’s Chicken. You really can’t tell it’s cauliflower! I actually stand over this recipe as I make it, because it doesn’t take long and I like to make sure it is cooked just right or it will be either soggy or hard.
Let me start by saying that I love being Paleo…but sometimes, I miss the little extras from dinners. Maybe that is why I spend most of my time trying to figure out how to make them. I think that it’s easy to cook protein, but its harder to enjoy the foods you used to love without some tested recipes.
Paleo Chicken Fried Rice
1 head of Cauliflower
3 Tbsp Sesame Oil
4 Green Onions, chopped
3 Tbsp Coconut Aminos
1 large Egg
6 cloves Garlic
2 tsp Chili Oil
½ White Onion
Veg Prep: Grate or finely chop the cauliflower very finely into rice-like pieces. We also like to call this “rice”…so rice the cauliflower. Next, mince the garlic, chop the green onions, and white onions, keeping the ingredients separate.
Heat the sesame oil over medium-high heat. Add the white onion, garlic and cauliflower. Let the ingredients brown a little, then reduce the heat to medium and add the green onions, coconut aminos and chili oil.
Cook for about 2 minutes, then add the egg. I literally just crack the egg into the pan with the cauliflower and mix it around until it is cooked through.
Cover and cook over medium heat until the cauliflower is the desired texture. The way we do ours, it takes about 5 minutes.
**Optional: you can chop some water chestnuts very finely to give it a little crunchy texture. I’d use ½ of a can and I’d add it when I add the cauliflower.
This recipe is Vegetarian. For Vegan, just omit the egg!
