Well, my 29th birthday was yesterday. I had the best day ever. Angel took me to get my hair cut (if you knew me, you’d know that that is awesome), then we went to the Ponte Vedra Spa (which was the most amazing experience, I’ve never been so relaxed), then we went to dinner with our neighbors, and then the planetarium to watch a Pink Floyd laser show. Very cool! It was the best birthday ever!
So I thought that I’d post this recipe for chocolate cupcakes, as it was recently my birthday. They are moist and taste just like regular chocolate cake! You’ll never know its Paleo! But it is…which is fantastic.
Recipe: Paleo Chocolate Cupcakes
- 2/3 cup Almond Flour
- ½ cup Cacao Powder
- 6 Eggs
- ¾ cup Coconut Oil
- 1 tsp Coarse Sea Salt
- 1 tsp Baking Soda
- 2 Tbsp Walnut Oil
- 2 Tbsp Vanilla Extract
- ½ cup Honey
- Preheat the over to 350 degrees Fahrenheit.
- Line a 12 count cupcake tin with either oil or cupcake papers.
- Mix all ingredients together (I use a whisk) in a bowl and spoon out the batter until each tin is ¾ full.
- Bake for 20 minutes or until a toothpick comes out clean.
