Paleo Chocolate Mousse, An Avocado Dessert

This Paleo Chocolate Mousse is made from avocados and coconut milk, honey and vanilla extract, with a pinch of sea salt and is smooth and creamy. Sometimes, a little chocolate is good for you…you know, antioxidants and all! Angel actually likes this mousse, even though he says he doesn’t like mousse…so there’s that! A quick note about the recipe, I like to add the cayenne – it doesn’t make it spicy at all – it just adds a nice, earthy flavor to the sweetness of the avocado and honey. It’s one of those ingredients that people stand around trying to guess what gives it that awesome flavor!

This weekend, we’ve still got Angel’s mom and stepdad, and its raining, so we’re trying to figure out what we can do with them that will be fun and different. I feel like all we’ve been doing with them is cooking and eating, which I love, but I feel bad that we’ve not been able to really do anything else. Jacksonville isn’t really a hopping town of excitement for visitors. They leave tomorrow, so we want to do something really special tonight. Hopefully we’ll figure something out. And when they leave, we’ve got to start thinking about wedding plans…so daunting! Thank goodness we’re both into doing something small.

Recipe: Paleo Chocolate Mousse

Ingredients

  • 2 Hass Avocados
  • ½ cup Coconut Milk
  • 1 ½ tsp Vanilla Extract
  • 1 ½ Tbsp raw Honey
  • ¼ cup Cacao Powder
  • ½ tsp Meyer Lemon Juice
  • ¼ tsp Course Sea Salt
  • ¼ tsp ground Cayenne Pepper

Instructions

  1. Also note that you will want your avocados to be very soft, but if you knock the little stem button off, it should still look green, not brown or it will not have the optimum taste. Can you use it? That’s up to you, but we’re suggesting very ripe, but not over ripe avocados.
  2. Now, this is so easy, its going to make your head spin. Just combine all ingredients with a food processor or blender (or your arm if you’re strong!), then pop the mixture in the fridge for at least 30 minutes. Done.
  3. This recipe is Vegan.
