Paleo Cilantro Chimichurri, A Garlic & Herb Marinade

This Paleo Cilantro Chimichurri is made with cilantro, mint, lime juice and garlic and is the perfect marinade for Paleo Skirt Steak. The mint really gives this recipe a light and unique flavor, but if you are a traditionalist, you can substitute with the same amount of cilantro. All you need to do is put everything in a food processor and that’s it!

What a week. I am so happy to have the weekend and Angel to spend some quality time with to shake my work-week off. Sometimes it’s all I can stand to just show up and not be awful. Transitions are difficult, don’t let anyone tell you they aren’t. Whether it’s for work, or love or your body or diet. Transitions are difficult. Very difficult. But remember, the best things in life take time, patience and work. Lots of work. …and I keep telling myself that during this time of transition. As we work our little tails off for seemingly nothing, its all going to be worth it in the end because we’re passionate about what we do and we’re putting our hearts and souls into it. …But today, its time to just relax.

Recipe: Paleo Cilantro Chimichurri


  • ½ cup fresh Cilantro
  • ¼ cup fresh Mint
  • ¼ cup Olive Oil
  • Juice of ½ Lime
  • 5 Garlic cloves
  • 3 Bird’s Eye Chili Peppers
  • ½ tsp Coarse Sea Salt
  • ¼ tsp ground White Pepper


  1. De-stem the chili peppers, then combine them with the cilantro, mint, olive oil, lime juice, garlic, sea salt and white pepper in a food processor and blend until incorporated.
  2. If using this recipe as a marinade, lightly dust the meat in Paleo Adobo Seasoning, then marinate the meat for 20-30 minutes at room temperature prior to cooking.
  3. Marinates 4-6 steaks.
  4. This recipe is Vegan!
