These Paleo Cinnamon Sweet Potatoes are smooth, with a hint of honey, cinnamon, coconut milk and nutmeg and taste just like the sweet potatoes from Boston Market! I’d never had them, but Angel used to love them. The recipe couldn’t possibly be easier – you just cook the sweet potatoes, then add everything else and smash! I love easy recipes, especially after a long day at work when I don’t feel like cooking all too much.
As a total side note, I’ve been thinking about officially getting my nutrition degree lately. That way, it would be legit. I’ve been thinking that sometime, I’d like to go to school for culinary arts as well, that way, I can concentrate on really getting to know this craft. Random, but I think it’s important to continually improve yourself and learn more about the things that you’re interested in…pearls of wisdom. Ha!
Recipe: Paleo Cinnamon Sweet Potatoes
- 2 Sweet Potatoes
- 1 tsp raw Honey
- 1/8 tsp ground Nutmeg
- ½ tsp Vanilla Extract
- ¼ tsp ground Cinnamon
- ¼ tsp Coarse Sea Salt
- ¼ cup Coconut Milk
- ¼ tsp Walnut Oil
- Peel the sweet potatoes and roughly cut into 3″ chunks. The smaller you make them, the faster they cook and the more watery they will be in texture. We shoot for ½ cup pieces. Boil a pot of water and add the sweet potatoes.
- Boil for 20-25 minutes, or until the sweet potatoes are soft throughout when pieced with a knife.
- Drain the sweet potatoes and transfer them to a bowl. Add the honey, nutmeg, vanilla extract, cinnamon, sea salt, coconut milk and walnut oil and mash under the desired consistency is reached.
