Paleo Creamy Coleslaw, A Cabbage Slaw

This is the best recipe for Creamy Paleo Coleslaw with a Paleo Mayo and coconut vinegar base, cabbage, red onions, carrots and poppy seeds. We add cilantro to ours, but if you’re one of the people who think it tastes like soap (like my dad), then you can just leave it out. This paleo coleslaw is great for a picnic side or for barbeque or seafood. It’s one of our favorites and it only takes a couple of minutes to make. You can even make this a day ahead, in my opinion.

So Angel had his talk last night about social media at UNF and it went really well. He had them laughing and engaged and it really couldn’t have gone better – considering that the room was full of credit-seeking, sleep-deprived students. I’m always so proud of him for getting up voluntarily in front of people. I do it for work and for Paleo Effect, but it always make me nervous for some reason. That’s why he’s the yin to my yang though…he’s good at all of the things I’m not!

Creamy Paleo Coleslaw

½ head Cabbage

¼ Red Onion

1 Carrot

1 Tbsp fresh Cilantro

1 Tbsp Coconut Crystals

3 Tbsp Coconut Vinegar

¼ cup Paleo Mayo

½ Tbsp Poppy Seeds

¼ tsp Coarse Sea Salt

¼ tsp fresh milled Black Pepper

Start by coring the cabbage, so just take off the bottom and cut out the core, which is dense and white and bitter. Then slice the rest or place it in a food processor and pulse it until it is the size you want to eat. We like 1/8” x 1” strips.

Dice the red onion, carrots, and cilantro finely. Combine these ingredients with the cabbage and mix until incorporated.

For the coleslaw dressing, stir the coconut crystals (our honey if you don’t have it), coconut vinegar, Paleo Mayonnaise, poppy seeds, coarse sea salt and black pepper until smooth. Add the dressing to the vegetables and mix until thoroughly incorporated.

Cover the bowl and place the coleslaw in the refrigerator for about 30 minutes, to soften the cabbage and let everything marinate on itself. You can stir it occasionally if you want, but it isn’t necessary.

If you didn’t see it above, then I’ll say it again, you can make this in advance of a day and it still tastes great {in my opinion}. We like to eat this with seafood, like Paleo Coconut Crusted Cod or barbeque recipes like our Paleo Pulled Pork.
