Paleo Croutons, A Seasoned Topping

I make this Paleo Croutons recipe when I have leftover bread (not often, but it does happen!). It is really best if it is a little stale, as if you make it immediately, it takes quite a while in the oven to dry it out. Also, WATCH these baking. They go from perfect to burnt very quickly. If you don’t like the taste of wheat croutons, just make sure to use our Fluffy Paleo White Bread recipe instead! Enjoy!

Day 2: To continue my saga on Nashville, there are some places you should go to visit or eat and so I don’t forget the awesomeness of the weekend we had, I’m going to spell them all out in today’s post:

Food Stop #1: Mitchell’s Delicatessen (where we Paleo-ified the lunch fare). Their food is all local, all natural, and most of the meats are cured and smoked in house – including handmade sausage and roast beef. When its not done in house, it is meticulously done in the same fashion by other proprietors. Be aware that some products that aren’t 100% Paleo (the beef is grassfed, but grain finished), so ask if you go. They support local farms and farmer’s markets, which makes us happy too!

We then headed to the Belle Meade Plantation. We learned about the horses, the culture and history (did you know that every Kentucky Derby race horse since 2003 can trace its roots back to Belle Meade? Cool, huh?) and walked around the grounds.  The tour guide was knowledgeable and dressed in 1800s garb, which is always fun.  We took the entire tour of the house, then we tried their wines and I must say, they need a little work. Otherwise, we had a really good time there (we’ll post some pics on facebook later!). Then, onto the next food stop!

Food Stop #2: Marché Artisan Foods (again, Paleo-fied). This European-style café boasts seasonal foods – and you can tell. Now these meats are all grassfed and again, the produce is local. We loved the atmosphere and you can actually buy gourmet ingredients here (very cool). The slow roasted pork shoulder was fantastic and the burger was to die for! They even make their own pickles. Any Paleo-er can appreciate that! You may have also seen the Siberian Salmon on our Facebook, which was just phenomenal. Asking for Paleo was worth it, but if you are going to do a Paleo cheat, this is where I would do it. Not to fret though, we got some great ideas and will be passing them onto you shortly!

After that fantastic dinner, we went to downtown, where we walked the strip and checked out the various saloons and music halls. Neither of us are big on country, but we had a great time walking around and people watching. We even had a family boxing competition (game where you punch a bag) and Angel won…my strong Paleo man! He got his fortune read and we took silly pics in country garb (again, just not a part of our lifestyle, so we had fun with it). We played pool and just hung out and had a good time.

Paleo Croutons

Fluffy Paleo Wheat Bread*

½ tsp Garlic Powder

½ tsp Onion Powder

½ tsp Coarse Sea Salt

½ tsp Black Pepper

½ tsp dried Oregano

2-3 Tbsp Olive Oil

*If you like white bread instead of wheat, try our Fluffy Paleo White Bread recipe instead!

Preheat the oven to 400 degrees Fahrenheit.

NOTE: It is OK for this bread to be stale. I like to make these croutons with whatever I have left over from making sandwiches with our Fluffy Paleo Wheat Bread recipe.

Toss all ingredients in a bowl and coat evenly. Spread out on a baking sheet and bake until golden brown, about 10 minutes.

You will want to watch these, as once they are done, they will quickly go from perfect to burnt.

Makes a lot of croutons if you use the entire loaf
