Paleo Cucumber Water, A Refreshing Summer Beverage

This recipe for Paleo Cucumber Water is so delightfully refreshing, so simple, it almost isn’t a recipe as much as a reminder how good it is to have cucumber water on a hot afternoon! Angel just loves this water, so when he goes out golfing with his boys, I make some for him to enjoy when he comes home. It really is amazing how the cucumber makes the water seem colder almost. So simple to make too – this is one of my go-to recipes when I have an abundance of cucumbers in the house!

Paleo Cucumber Water

1 Cucumber

1 Pitcher of filtered or spring water

Cut the cucumber into slices, discarding the ends. It does not matter how thick you slice these, I shoot for 1/8″ if I want it to be pretty, or just roughly chop them and throw them in the water if it’s just for us. Let sit for at least 30 minutes.

I suggest it be served up with our Paleo Pulled Pork, Paleo Sweet Potato Salad or Paleo Shrimp Salad, and Paleo Cobb Salad for a delicious meal!
