This Paleo Kale Basil Salad with Paleo Honey Mustard Salad Dressing is made with a kale base, with basil leaves, vine ripe tomatoes, toasted pepitas (pumpkin seeds) and Paleo Hardboiled Eggs. And we’ve been really into kale lately…maybe a little too obsessively. Kale is just so earthy and delicious, and it is so good for you too! Kale is very high in iron, Vitamins K & A, has powerful antioxidants and is an anti-inflammatory. It goes well with a lot of different flavors as well, so you can always keep it interesting!
This recipe takes about 15 minutes from beginning to end…its so easy, its our go-to salad when we’re tired or busy and just want some good fuel for our bodies. There aren’t any tips or tricks, just simple ingredients made fast. We’re recommending our Paleo Honey Mustard Salad Dressing, but we included variations at the bottom of this recipe if you’re looking for another tone.
Recipe: Paleo Kale Basil Salad
- Wash and chop all ingredients and toss in the dressing. Garnish with toasted pepitas and serve!
- This recipe can easily be made Vegan, just omit the Paleo Hardboiled Eggs!
