Paleo Lemon Date Laddu, A Raw Dessert

This Paleo Lemon Date Laddu recipe is made from medjool dates, almonds, lemon juice, vanilla, and sea salt and is a soft, delicate dessert. Laddu is an Indian dessert that comes from the Sanskrit word for ball. Traditionally, it is made of flours, coconut, sugar and other flavors, but because we’re Paleo, we’re going raw-style! Laddu is often made for festivals or big celebrations like weddings…which feels appropriate because with Paleo, sweets should be eaten sparingly as a treat (get it, special occasion? Eh? Haha). This recipe is for our Paleo Lemon Date Laddu, which is only sweetened with dates. We don’t have any notes for this, it really is just as easy as slapping it all in a food processor. We are coming out with some additional flavors, so stay tuned for more good stuff!

Last weekend we cooked so much I needed a break, but this weekend, we’re working on the garden. I’m so excited to really get going on it this year – I’ve read about 6 books and done months of research on this and this time, it is going to work. If it doesn’t, then I know that it is just the space and we’ll just have to wait to chop down the tree and rearrange the space before it will work. And I’ll cry. I just want it to work so badly. I really do. It’s my thing now and I’m gonna figure it out if it kills me.

Recipe: Paleo Lemon Date Laddu

  • 20 pitted Medjool Dates
  • ½ cup sliced Almonds*
  • 2 tsp Meyer Lemon Juice
  • ½ tsp Meyer Lemon Zest
  • 2 tsp Vanilla Extract
  • ½ tsp Coarse Sea Salt
  • Optional: unsweetened Coconut flakes

  1. *We used sliced almonds because they break up easier and faster. If you only have whole almonds, that is fine, just put them in the food processor first. Any kind is OK as long as they are not salted.
  2. These are going to be the easiest set of instructions you’ll ever see. Ready? Place the dates in a food processor. Pulse until they are broken down a little, then add everything else. Pulse until all ingredients are incorporated. Then roll into balls.
  3. Voila! Just that easy!
  4. This recipe is Vegan!
