Paleo Lemongrass Stir-fry, A Vietnamese-Inspired Dish

Well, it’s the last day of 2011 and I really don’t have a single regret this year. We’ve been so lucky to have each other, great friends, great family…truly blessed. Angel even got to see snow falling from the sky for the first time in Indiana with my family this year! We couldn’t have asked for anything more.

Paleo Lemongrass Stir-fry

1 lb New York Strip Beef*

2 Tbsp Lemongrass paste

1 Tbsp Fish Sauce

1 Tbsp Coconut Aminos

1 Tbsp Coconut Vinegar

½ Tbsp raw Honey

4 Bird’s Eye Chili Peppers

1 Garlic clove

½ Tbsp Sesame Oil

½ Tbsp Paleo Adobo Seasoning

1 Green Onion

½ Red Bell Pepper

½ Green Bell Pepper

½ small Yellow Onion

*You can use any type of protein. Shrimp is especially good in this recipe.

Cut the beef into ½” strips and rub down each side with the Paleo Adobo Seasoning. Combine the beef with the lemongrass paste, fish sauce, coconut aminos, coconut vinegar, honey, minced bird’s eye chili peppers, minced garlic, sesame oil, and diced green onion. Let the beef marinate for at least 20 minutes.

Cut the onion and red and green bell peppers into small strips, about 1” long (or however big you want to eat it).

Heat a pan on medium-high (~6) heat. Add the beef and marinade. Cook the meat halfway through, there will be some red and brown on the meat. Once halfway cooked, add the onions and red and green bell peppers. Continue to cook until the onions are almost translucent. Stir frequently. Should take about 10 minutes total.

Serves 2-4

This recipe can easily be made Vegan, just omit the protein and double the vegetables!
