Paleo Pesto Sauce, A Condiment or Marinade

This Paleo Pesto Sauce recipe is really unique because it has the sweetness of the meyer lemon and the added mint, in addition to the garlic, basil leaves and pine nuts, to give it a little dimension. We like to use this on our The Roman (part of our sandwich series)! Super easy, done in 3 seconds keeps nice in the fridge. I even collect these little jars and give it out as gifts. We have some great friends who have a meyer lemon tree, so you’re going to get a lot of lemony recipes as soon as I get back from Richmond, VA! Don’t have meyer lemons? That’s OK, you can use regular…the meyer lemons are just a little sweeter (making these best for lemonade…which I’ll be sharing later next week!).

Recipe: Paleo Pesto Sauce


  • ½ Tbsp Pine Nuts
  • 1 Garlic clove
  • 8 fresh Basil leaves
  • ½ Tbsp Meyer Lemon Juice
  • 4 fresh Mint leaves
  • 1 Tbsp Coconut Vinegar
  • 3 Tbsp Olive Oil
  • ¼ tsp Coarse Sea Salt
  • ¼ tsp Black Pepper


  1. Combine the pine nuts, garlic, basil, mint, lemon juice, coconut vinegar, olive oil, sea salt and black pepper in a food processor (or my favorite, the Bullet) and blend until smooth in consistency.
  2. Makes about ¼ cup
  3. This recipe is Vegan!
