Paleo Pineapple Smoothie, A Vitamin C Breakfast

This Paleo Pineapple Smoothie is made with fresh pineapple, coconut milk, coconut water, honey and vanilla and is full of vitamin C, manganese and fiber (amongst other nutrients). The coconut milk & water also have vitamins C, E, and B (1,3,5,6) and a slew of minerals to put a pep in your step and keep your immune system kickin strong!

As for our New Year, we went to Orlando to celebrate with some friends at the Grand Bohemian, which is a hotel and art gallery. Really cool concept. They have an absolutely beautiful Imperial Grand Bosendorfer piano, which is one of 2 in the world. We listened to jazz, had a couple of appetizers (beef carpaccio, which you’ll get a recipe of later this week or next) and went out with some friends for a night on the town. Then the next day, we drove to the airport to pick up Angel’s mom and step dad, who are staying with us for the next week and a half. We’re going to try to keep posting new recipes, and hopefully, we won’t fall short! My new years resolution is to be a little more fun with the website and crank out more recipes!

Recipe: Paleo Pineapple Smoothie

Ingredients

  • 3 cups fresh Pineapple
  • 1 cup Coconut Milk
  • 1 cup Coconut Water
  • ½ tsp raw Honey
  • ¼ tsp Vanilla Extract
  • Optional: Ice

Instructions

  1. Blend the pineapple, coconut milk, coconut water, honey and vanilla together until smooth. If you want a thicker, icier smoothie, add 8 ice cubes to your blender and go to town. If you want sorbet, plop that mixture in an ice cream maker and follow the instructions (ours is 20 minutes).
  2. This recipe is Vegan!
