So this Paleo Pomegranate Apple Salad is great. I had one similar to it at Seasons 52. I love the balance of flavors, and if you use the sesame ginger dressing, you’ll see what I mean. The reds and greens remind me of Christmas-time and tis the season for pomegranates! Annoying to shell, but oh so delicious! I recommend making this after the Paleo Sesame Orange Roasted Duck, as you can top this salad with the leftovers and use it as an entrée and it is fantastic. If you have a little mint, throw it in too…very tasty!

Paleo Pomegranate Apple Salad
Mixed Greens (We used Spring Mix and Baby Spinach)
1 Gala Apple
½ cup Pomegranate Seeds
½ cup Toasted Almonds
½ cup Butternut Squash
4 Tbsp Green Onions
Optional: Paleo Sesame Orange Roasted Duck
Optional: Mint Leaves
In a bowl, combine the mixed greens, chopped apple, pomegranate seeds, toasted almonds, diced butternut squash, and chopped green onions (I use the green part only), chopped duck and toss in dressing.
Easy and delicious! We like to make this after we make our Paleo Sesame Orange Roasted Duck, so we can use the leftovers in this salad ;)
This recipe is Vegan (if you omit the duck!)
