Paleo Pomegranate Balsamic Vinaigrette, A Salad Dressing

Pomegranates are still in season and I like to use seasonal for as much as I can, so its the perfect time for this Paleo Pomegranate Balsamic Vinaigrette! This salad dressing is a little sweet and a little tangy. It can be as easy as throwing everything into a blender or you can extra effort it and emulsify it properly.

So Christmas was a success! We both got everything we wanted from Santa – for me, Rosetta Stone (to learn Spanish) and Angel got a new watch and all sorts of goodies. And of course, I got my new Cuisinart food processor, so I’m super excited! We spent a whole day just playing around with it. Its so fast and easy! Stoked.

Paleo Pomegranate Balsamic Vinaigrette

2 Tbsp Pomegranate Seeds (or Pom Juice)

1 Tbsp Balsamic Vinegar

½ Tbsp raw Honey

¼ cup Olive Oil

Lazy version: Put all ingredients in a blender and blend. Strain and ready to use!

Non-lazy version: Juice the pomegranate seeds and strain. Combine the juice with the balsamic vinegar and honey. SLOWLY whisk in the olive oil until it emulsifies. You want to do this very slowly…almost drip slow. And Voila!

This recipe is Vegan!

Makes about ¾ cup
