This Paleo Power Bowl with Guacamole recipe is made with grass fed ground beef, Paleo Adobo Seasoning, olive oil, Angel’s Paleo Poached Eggs, tomatoes, Fast Paleo Guacamole and fresh cilantro and is amongst some of our favorite breakfast recipes at the Ayala house. We’ll be doing an entire series on them actually and have been tossing around the idea of possible expanding the idea into food service. We’re not there yet, but that’s how much we like these. They’re great protein for the morning to give you long-lasting, sustained energy and have nothing but fresh, whole ingredients. There are no tricks, just a note that you can make the meat (beef, chicken, pork, etc.) early if need be, then reheat it. We cook a few pounds at once and vacuum seal the cooked meat in single serving portions for the morning. Then we just reheat and throw in some veggies and eggs. Done!

Recipe: Paleo Power Bowl with Guacamole
- Dust the ground beef with our Paleo Adobo Seasoning and dig in with your hands to mix it all into the beef. I would say that we use about ½ tablespoon of the seasoning, but if you want to try lighter, you can always add a little as you go. Heat the oil over medium-high heat and add the beef, cooking and stirring, until the meat is no longer pink.
- Make the Fast Paleo Guacamole according to our directions here.
- After the guacamole is made, boil the water and make the Angel’s Paleo Poached Eggs according to the recipe here.
- Chop the cilantro and tomatoes and when everything is done, we layer: Fast Paleo Guacamole, beef, Angel’s Paleo Poached Eggs, tomato and cilantro. Serve!
