This Paleo Pulled BBQ Chicken recipe is made from free range, antibiotic free chicken thighs, lightly dusted with Paleo Adobo Seasoning, seared in olive oil and tossed in Paleo Chipotle BBQ Sauce for the perfect picnic barbecue! And this recipe is so easy, you actually don’t even have to think about it. At all. Delicious, juicy, but not overdone and goes great in our Paleo BBQ Chicken Royale!
Yesterday was a really big day for us here at Paleo Effect. Our book, due this September, got picked up for a pilot at Costco! We’re so excited to be able to reach more people about their health and we really think that Costco would be a great avenue for it. Hopefully, that does well and we get picked up nation-wide, but either way, we were pretty excited!!! :D
Recipe: Paleo Pulled BBQ Chicken
- Preheat the oven to 350 degrees Fahrenheit.
- Heat the olive oil in a pan over high heat. Lightly dust the chicken thighs with adobo seasoning on all sides. Sear the chicken until brown on all sides. Place the chicken in a baking dish, cover with half of the Paleo Chipotle BBQ Sauce, then cover with tin foil and bake for 1 hour, flipping once around the 30 minute mark.
- The chicken will be ready when it easily falls apart when poked with a knife. Then slather with the remaining Paleo Chipotle BBQ Sauce and toss to coat.
