Paleo Red Salsa, A Side with Strawberries & Peppers

We made this recipe for Paleo Red Salsa to go with our Paleo Fish Tacos, but it’s also really good in our Paleo Steak and Salsa Wraps. It has some spicy notes, which are followed by the sweet juiciness of the strawberries. Really, a great side to any wrap, fish or meat!

So Angel is still out of town in Vegas for a friend’s bachelor party. I talked to him just a few minutes ago and he even won a little money! I’m glad he is having a good time, but I’m sad that he’s not here! Anyway, without him here, I’m doing a little catching up on recipes and chillin with friends.

Paleo Red Salsa

1 Red Bell Pepper

1 Vine Ripe Tomato

4 Strawberries

5 Garlic cloves

Juice of ½ Lime

3 Tbsp fresh Cilantro

½ Tbsp Coconut Vinegar

1 Tbsp Honey*

½ Tbsp Olive Oil

½ tsp Chile Flakes (or Chili Oil)

½ tsp Coarse Sea Salt

½ tsp Black Pepper

*We like to use a savory, light flavored honey, like Rapsflower Blossom Honey.

Finely chop the red bell pepper, tomato (I remove the seeds as well, as I don’t like runny salsa), hulled strawberries, garlic and cilantro.

Combine all ingredients in a bowl and refrigerate, covered, until ready to serve.

This recipe is Vegan!

Makes about 1½ cups
