Paleo Sesame Orange Salad, A Picnic Side with Almonds

This Paleo Sesame Orange Salad is made with fresh cabbage and carrots, red onions, cilantro, mango and green onions with a orange juice, sesame oil, ginger, garlic, lemongrass, and Paleo Sweet Chili Sauce dressing and is a really great picnic, lunch, or dinner salad. The salad is actually made of cabbage, which stays really nicely in the refrigerator overnight if need be. As a side note, if you don’t want to cook the Paleo Sweet Chili Sauce, you don’t need to  (you also don’t need to include the arrowroot, as this is for a dressing and we don’t care exactly about the consistency). You can actually put all of the ingredients for that in the blender along with the rest of the ingredients below. Just make sure to do the math on the conversion, as you only need 3 tablespoons for this recipe. Otherwise, easy breezy and ready in a flash!

As for life, we’re all over the place! Angel is still trying to figure out how to get to the next step on his apps, and I’ve been traveling for work a lot. 2 weeks ago, I was in Chicago, now I’m in Richmond, next week I’ll be in St. Petersburg (FL), and the week after that, Richmond again. Whew…makes me tired thinking about it! But at least I’m getting a lot of hotel points and frequent flyer miles, so I guess it’s not all bad. Ha! I will be happy when we have a little time to ourselves to catch up and relax a little though! This weekend we spent the entire day just hanging out and today we’re going to get some things done around here…though not to start at zero: Angel spent the last few days cleaning the entire house. What a great guy! I came home to a beautiful, brand new home! Now, time to work on that garden!

Recipe: Paleo Sesame Orange Salad

Ingredients

  • ¼ cup Orange Juice
  • ½ tsp Sesame Oil
  • 3” piece fresh Ginger
  • 2 Garlic cloves
  • ½ tsp Lemongrass Paste
  • 3 Tbsp Paleo Sweet Chili Sauce
  • 1/3 cup Olive Oil
  • 1 cup Carrots
  • ½ head Cabbage
  • 2 Green Onions
  • ½ Red Onion
  • ¾ cup fresh Cilantro
  • 1 Mango
  • ½ Orange (or Mandarin Oranges)
  • 1/3 cup sliced Almonds

Instructions

  1. Combine the orange juice, sesame oil, fresh ginger, garlic cloves, lemongrass paste, Paleo Sweet Chili Thai Sauce, and olive oil in a blender or food processor and blend until well incorporated to make the Paleo Sesame Citrus Dressing.
  2. Use a vegetable brush to clean the carrots and shred them. I leave the skin on, as that is where most of the nutrients are. Next, shred the cabbage and red onions. Chop the green onions, cilantro, mango, and orange. Combine the cut ingredients and toss with ¼ – ½ cup Paleo Sesame Citrus Dressing (depending on how much dressing you like…we use about ¼ cup).
