This Paleo Strawberry Herb Salad is made with chard, kale, spinach, strawberries, mint and basil and is fresh, light, and perfect for spring and summer. There’s nothing better than fresh strawberries from the garden too! We don’t traditionally eat this recipe with any dressing at all, that’s how good it is, but if you really want to, I’d recommend our Paleo Balsamic Salad Dressing, Paleo Honey Mustard Salad Dressing or Paleo Sesame Ginger Salad Dressing. Also note that you’ll want to watch the Paleo Honey & Sea Salt Nut Medley, because when it’s ready, it will burn fast if you aren’t watching it. I also highly recommend making this recipe with parchment paper, as it will come off the baking sheet like nothing if you use it. Otherwise, it can be a little bit of a challenge scraping it off of there.
I’m looking forward to this weekend, because we are both going to be home and we don’t have any plans! Well, not that I know of at least. I’m really looking forward to getting in my garden and maybe planting a couple of full-grown plants in the spaces that are left. I’d say that I would need to weed, but with square foot gardening, that only takes about 1 minute, as the soil is friable and loose. I wish I had a bigger garden now that its going so good so I’d have more to do in it!
Recipe: Paleo Strawberry Herb Salad
- 1 bunch Chard
- 1 bunch Kale
- 1 bunch Spinach
- ½ pint Strawberries
- ½ cup fresh Mint
- ½ cup fresh Basil
- Paleo Honey & Sea Salt Nut Medley
- Make the Paleo Honey & Sea Salt Nut Medley according to our directions here.
- While the nuts are in the oven, roughly chop everything else, making sure to hull and discard the tops of the strawberries.
- Once the nuts have cooled down a little, toss all ingredients together. We don’t use any salad dressing for this recipe, but if you want some, try our Paleo Honey Mustard Salad Dressing or Paleo Sesame Ginger Salad Dressing!
