Paleo Sunny Side Up Eggs, A Breakfast Protein

Everyone needs a great Paleo Sunny Side Up Eggs recipe…its a classic breakfast food. I think that people think that making eggs is easy, but really, truly good eggs need a little time…just give ’em a little tiiiime. Be patient and they will be amazing. Angel has always been better than me at this art of the egg, but I am getting better with a little practice. Every time I make them, I get better…so practice makes perfect!

Paleo Sunny Side Up Eggs

8 Eggs

Coconut Oil Spray

pinach Coarse Sea Salt & Black Pepper

OK. So when Angel wanted to buy the tiny little egg pans, I thought he was loosing it. But we all must pick and choose our battles, so I let him get them and thought they were the stupidest thing I’d ever seen. I have since been proven wrong. If you don’t own egg pans, then get them. They are great for even cooking! I really stuck my foot in my mouth on that one…and he knows it!

Anyway, take your pan and spray it down with oil. Heat the pan over medium (~4). Not medium high, medium. These will take about 10-15 minutes to do them perfectly. Once your pan is heated, add the egg and sprinkle with a pinch of coarse sea salt and fresh cracked black pepper. Then just sit and wait until the egg whites are cooked through and the translucency has disappeared. Again, I cannot stress the importance of lower heat. If you use too high of a heat, the bottom will be crispy and impossible to cut without a knife. And we don’t want that, now do we?
