Paleo Sweet Poppy Seed Salad, A Raw Salad

This Paleo Sweet Poppy Seed Salad has broccoli, cauliflower, mushrooms and red onions, tossed in a sweet poppy seed vinaigrette. This particular recipe consists of raw vegetables, and is a variation of a salad that my mom makes. Although it can never be the same as what mom makes, this one is pretty darn close! It’s fast to make too, but tastes more complex, so its great for parties or events where you have to make a lot of recipes at the same time.

Well, we’re back from Puerto Rico and sigh, back to work and all other things everyday. Its nice to be home, but its always nice to be away! At least we had some good times. We went to the rainforest, the bioluminescent bay, El Toro (where I thought we were going to die on the mountain roads), then the beach. Really, we had the best time with family and site seeing. In the spirit of getting back into the swing of things, I’m starting this week’s recipe with something easy. You know, to EASE back into things ;)

Recipe: Paleo Sweet Poppy Seed Salad

Ingredients

  • ½ cup Coconut Milk
  • 2 Tbsp Water
  • ¼ cup Coconut Crystals
  • 1/3 cup Coconut Vinegar
  • ½ tsp ground Paprika
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Poppy Seeds
  • ½ tsp Onion Powder
  • ½ tsp ground Mustard Seed
  • ½ Red Onion
  • ½ head Broccoli
  • ½ head Cauliflower
  • 1 cup White Button Mushrooms
  • 2 Carrots

Instructions

  • Combine the coconut milk, water, coconut crystals, coconut vinegar, paprika, lemon juice, onion powder, and mustard powder in a blender and pulse until combined. Once the mixture is consistent, stir in the poppy seeds by hand. We don’t want to use the blender, as breaking apart poppy seeds changes the flavor and can be bitter.
  • Peel and slice the red onion into 1” slices, break the broccoli and cauliflower into bite-sized florets, and slice the mushrooms. Combine the vegetables and salad dressing into a bowl and toss to mix.
  • This recipe is Vegan!
