This recipe for Paleo Sweet Potato Hash Browns is a savory breakfast recipe with fresh parsley, olive oil, garlic, and lemon pepper. We like this recipe as a side or the base for other breakfast recipes like our Paleo Breakfast Casserole. Note that they cook quickly, so stir frequently to prevent burning. I personally like a little char, just to give it a little caramelized flavor, but that’s just me.
Another busy busy busy week! I didn’t even have time to post yesterday! We had family out for the weekend, which was a blast! I didn’t want to see them go, as we don’t get to see family very often. We went to the Washington Gardens (still in FL), the beach, flew a kite, caught some fish, saw some snakes and watched movies. Even the Easter Bunny came! We had so much fun and excitement that now Angel is sick. Boo!
Recipe: Paleo Sweet Potato Hash Browns
- 2 Sweet Potatoes
- 2 Tbsp Extra Virgin Olive Oil
- ½ tsp Garlic Powder
- 1 tsp fresh Parsley
- ½ tsp Onion Powder
- ½ tsp Lemon Pepper
- ¼ tsp Coarse Sea Salt
- ¼ tsp Black Pepper
- Peel the sweet potatoes and then grate them on a cheese grater. Toss the gratings with the spices, salt and pepper. Heat the oil in a skillet over medium to medium-high heat. Add potatoes. Cook until the sweet potatoes are tender, stirring frequently.
- *NOTE: if you want it to be done faster, you can cover the skillet with a lid for a few minutes to steam the potatoes.
