Paleo Tuna Salad, A Lunch Sandwich

This Paleo Tuna Salad recipe is made with tuna, celery, shallots, garlic, paleo mayo, paleo dill pickle relish, stoneground mustard, and fresh dill and is served on toasted Fluffy Paleo White Bread. Any time that Angel points out that he really likes something or misses it, I try to make a mental note to figure out a way to make it Paleo. Sometimes this works, sometimes it doesn’t. In this particular situation, it worked out fantastically. This recipe is really easy, very fast, and tastes great. We sometimes even make this as a snack, as it takes so little time!

So this weekend, we’re looking forward to some fun times in Daytona at the Bud Shootout – a car race. Neither of us has ever been to a car race, but I got tickets from a vendor that I work with, so we thought it would be something new to try. And then, of course, IKEA, which is just fun.

Recipe: Paleo Tuna Salad

Ingredients

  • 10-12 oz cooked Albacore Tuna
  • 1 Celery rib
  • 1 Shallot
  • 1 Garlic clove
  • 3 Tbsp Paleo Mayo
  • 6 Tbsp Paleo Dill Pickle Relish OR ½ tsp Coconut Vinegar
  • ½ tsp Lemon Juice
  • 1 Tbsp Stoneground Mustard
  • 1 tsp fresh Dill
  • ½ tsp fresh Parsley
  • ½ tsp Onion Powder
  • ¼ tsp ground Cayenne Pepper
  • ¼ tsp Coarse Sea Salt
  • ¼ tsp Black Pepper
  • Fluffy Paleo White Bread

Instructions

  1. Finely dice the celery, shallot, and garlic and place in a large bowl.
  2. Add the tuna, Paleo MayoPaleo Dill Pickle Relish, lemon juice, stoneground mustard, dill, chopped parsley, onion powder, cayenne powder, coarse sea salt and black pepper.
  3. Serve atop our toasted Fluffy Paleo White Bread!
