So I posted the Chili seasoning and I would be remiss if I didn’t follow it up with the actual Chili recipe! This recipe is really great for football season…which is COMPLETELY appropriate for this weekend! I think we’ll make it with some Paleo approved hotdogs (and buns when I come up with a recipe!).

1 Tbsp Walnut Oil
1 lb ground Turkey (or Beef, the image pictures Turkey. If you like a lot of meat, I’d go with 2 lbs)
2 small Celery stalks (diced)
1 Green Bell Pepper (diced, seeds and stems removed. If you like really really spicy, leave the seeds in)
1 Red Bell Pepper (diced, seeds and stems removed. If you like really really spicy, leave the seeds in)
1 sweet Yellow Onion (diced)
1 Zucchini (diced)
2 Garlic cloves (minced)
26 oz chopped Tomatoes (we like Pomi, if you don’t like spicy, add a little more tomato)
2 cups Water
2 cups Chicken Stock (or Beef if you are using Beef)
Chili Seasoning (we use all, but if you like it a little less spicy, just add less)
Heat the walnut oil in a skillet and cook the meat until no longer pink. Drain the grease and return the meat to the pan on the oven.
Add the chili seasoning mix to the meat and incorporate. Add the water, chicken stock, vegetables, and tomatoes.
Bring to a boil, turn the heat to low, cover and cook for about 2 hours.
Serve with our Paleo Biscuits for a complete meal!
