Paleo Coconut Cream Pie Snack Bars, A Sweet Treat

So I’m not sure about everyone, but if you are Paleo, there is a very good chance that you have heard of Lara Bars. They are great, sweet treats with no preservatives or extras of any kind. They are raw, but they taste like baked goods! Mmmm!

At any rate, we wanted to recreate the coconut cream pie bars (as they are the best, for sure!) and I think they came out really nice. Obviously, you can buy the bars at the store, but its more economical to make them at home. Enjoy!

Paleo Coconut Cream Pie Snack Bars

1 – 1 ½ cup Dates (Angel likes more dates for a more candy-like taste)
1/2 cup shredded Coconut (unsweetened)
3/4 cup Almonds (blanched)
1 tsp Coconut Oil (melted)
1 tsp Vanilla Extract
1 tsp Honey or Coconut Crystals

I like to melt the sugar in the oil with the vanilla first. This blends the wet ingredients and makes sure that they are incorporated.

Put the dates, coconut and almonds into a food processor. Pulse until all are blended. Add the nut mixture to the oil mixture until mixed thoroughly.

You can take a large handful and shape into a bar, but I like to smash it all down in a loaf pan and pop it into the refrigerator. Once they are cold, they stick together much easier and will just pop right out of the pan, making it super easy to wrap in foil for on the go. I wrap mine in tin foil, but plastic wrap will do just fine.

Store them in the refrigerator until you are ready to eat them.
