Paleo Eggs with Parsley and Green Onions, A Morning Protein

So tonight Angel and I are going to a concert at the Freebird to see Neon Trees. I’ve heard them live and I think that it’ll be a very good show. Angel has been singing their songs for the past week so much that I think I know all of the words by proximity! Anyway, usually we’re pretty much just homebodies during the week, but every now and again, its good to get out…so I’m excited.

But back to the food…I get a lot of questions about what we do for breakfast, so here’s another easy suggestion – for when you just need something quick and tasty to get you going before work!

Paleo Eggs with Parsley and Green Onions


¼ cup Parsley (fresh)

2 Green Onions

Coconut Oil Spray

Sea Salt & Pepper

So again, if you happen to have one of our favorite egg pans (or a normal pan will work too), then spray it down with the coconut oil and place it over medium heat. It is important that the heat is lower on eggs, or by the time that the top goo is cooked, the bottom with be a chewy mess.

Once the pan is heated over medium, crack your egg (or eggs) and sprinkle with salt and pepper. Cook for about 5 minutes, then add the chopped parsley and green onions.

These eggs will take about 10-15 minutes to cook perfectly, so sit back and relax.

If you really want a delicious breakfast, serve these eggs over our Savory Sweet Potato Hash Browns or along side our Steak and Mushrooms for a fantastic way to fuel your morning!
