Anyway, back to the food.
I find that in the summer, I like to play with textures. This recipe for Green Tomato Relish is really a salsa that is quite delicious. It is cold, but spicy – which I love – and the crisp of the fresh vegetables really complements fish and other meats.
Paleo Green Tomato Salsa
1 Green Tomato, chopped
½ Red Onion, chopped
Juice of 2 Limes
1 Green Pepper
3 Garlic cloves
½ cup fresh Cilantro (it really must be fresh or its just not the same – get rid of the stems and chop coarsely)
3 Arbol Peppers (I use the dried ones and chop them finely)
1 tsp Chili Flakes
Sea Salt and Pepper (to Taste)
Once you chop all of your ingredients, mix them together and serve…its that easy! If you like your salsa pulverized, stick it in a Bullet for quick and easy blending!
