I excited today because we are going to go to Tampa to go to a concert that I bought tickets for Angel’s birthday. It’s Jack’s Mannequin and Guster together at a small venue in Ybor City, so it should be really cool, as I have not seen either of them live.
Enough about that, today, I’m posting the recipe for our Taco Salad and I really think it goes great with this salsa. I know it sounds a little strange, no tomatoes, but this salsa is really quite good. I promise that if you like spicy salsas, this won’t disappoint!
Paleo Jalapeño Salsa
3 Jalapeños (fresh, de-seeded, tops discarded and chopped)
1 Tbsp White Vinegar (if you do it) or Coconut Vinegar
1 Tbsp Extra Virgin Olive Oil
3 Garlic cloves (fresh, chopped)
½ White Onion (chopped)
2 Tbsp Lime Juice (fresh)
Sea Salt (to taste, I use about ¼ tsp)
I like to chop all of my ingredients, then add them to a Bullet and give it a little pulse…that way, I have some bigger chunks and some smaller, juicier chunks.
