Speaking of open-ended things. I thought I would finally post this recipe that I have been ignoring since we started this site. I think its about time. And I must say, it’s a good one. I even like to make this sometimes when I feel a little lousy – warms me right up!
You can add a variation to this by adding carrots and daikon strips, but I don’t. Tastes good either way, but sometimes, I think that simple is best…
Paleo Japanese Clear Soup
3 cups Chicken Stock
1 ½ Tbsp Coconut Aminos (or Tamari Wheat Free Soy Sauce, if you do soy)
½ cup chopped Green Onions
1 Tbsp Sherry
Assorted sliced Mushrooms (We use about ½ cup, but if you like more mushrooms, then add more!)
Sea Salt (to Taste)
*Optional: 1 tsp Lemon Juice if you have it
Bring the stock, sherry, lemon (if you are using it) and aminos to a boil. Turn the heat down to low, then add the green onions and mushrooms. Season with sea salt to taste.
Serve with our Cucumber Salad and Japanese Ginger Dressing for a light, delicious meal.
