Paleo Japanese Ginger Salad Dressing, A Sushi House-Style Favorite

Angel is, thankfully, a big fan of salads, so I can get my fix on them whenever I feel like making one. We came up with this recipe because he really likes the dressing that they serve at sushi restaurants…and since we don’t go out much now that we are Paleo, we’ve come up with our own to satiate our cravings. Note that if you like this dressing a little chunkier, just pulse it in the food processor (or Bullet!) until you get the desired consistency. (In the image, I hit liquify and walked away…hehehe). This goes great with the Cucumber Salad and Japanese Clear Mushroom Soup. Enjoy!

Japanese Ginger Dressing

½ cup Grapeseed Oil

½ cup Olive Oil

2 Tbsp Coconut Aminos (or Wheat free Tamari if you eat a little soy)

Juice of 1 Lemon

3 Garlic cloves

2 Tbsp fresh Ginger

1 tsp dry Mustard

2 tsp Honey (raw)

1 small Carrot

¼ tsp Coconut Vinegar

Blend all ingredients in a blender or food processor until smooth.

Serve over our Cucumber Salad and pair with our Japanese Clear Soup for a light, tasty meal!
