Sometimes, I really reflect on being Paleo and thank goodness we made the switch, especially on busy weeks like this one! We were just out of town for the Daytona Bud Shootout to watch the racing, we’re starting Crossfit today (woo hoo! I’m SOOOO excited!), Angel is working on a migration plan at work so he’s ramping up his personal business, I have 2 late business meetings, we have a party on Friday that will be great, and one of Angel’s best friends is getting married on Saturday. We’ll need all the Paleo energy we can get!
This recipe is simple, but really delicious and is one of our favorites, when we want a treat. The mild heat of the Sesame Poke Sauce pairs perfectly with the cold ahi tuna. Note for all of you Paleo practitioners that do a little rice: This is perfect with rice. We originally made this recipe to go over rice, but now that we don’t eat it, we omit. If you are a hardcore athlete, I would suggest that you cook your rice, without covering or stirring. I would also add a little pineapple juice to give it a sweet zing.
Ahi Tuna Poke Bowl
2 Ahi Tuna Filets (must get Sashimi Grade!)
Make sure that the tuna that you get is sashimi grade. We are not going to cook this at all. If you want to, that is OK – I would suggest sesame oil, a high heat pan, and a VERY quick sear on each side.
Slice bite-sized chunks of both tuna and avocado. Sprinkle with a little sea salt, then cover with our Sesame Poke Sauce. If you are eating the rice, I like to put down rice, avocado, then tuna – to make sure the heat from the rice doesn’t affect the tuna.
