Paleo Berry Syrup, A Fruity Topping for Pancakes or Desserts

Today, we’re shifting back into regular paleo gear with our berry syrup recipe. This is really delicious over pancakes or desserts AND its not made in the microwave, so no worries! This recipe is naturally sweet, without hardly any added sugar. Keep in mind that the fruit needs to be ripe so that the fruit is sweeter. If you have slightly less than ripe fruit, you will need to add a little additional agave.

Berry Syrup

¾ cup diced Strawberries

½ cup halved Blueberries

½ cup Red Wine (we like Cabernet Sauvignon)

½ tsp Lemongrass paste (or 1/2 tsp food processed lemongrass)

¼ cup Light Agave

½ tsp Lemon Juice

splash Lime Juice

Combine all ingredients in a pan and bring to a boil. Once boiling, turn the heat down to low (about a 3 on my oven) and cook for 20-30 minutes, or until you reach the desired consistency. NOTE: the longer you cook this, the thicker it will be.
