Paleo Berry Syrup, A Vegan Breakfast Glaze

Our Paleo Berry Syrup recipe is made with fresh berries, lemon and lime juice, and sweetened with a little maple syrup, which is perfect for our Paleo Fluffy Pancakes! This is really delicious over desserts as well. This recipe is naturally sweet, without hardly any added sugar. Keep in mind that the fruit needs to be ripe so that the fruit is sweeter. If you have slightly less than ripe fruit, you will need to add a little additional maple syrup to balance the tart flavor. So remember – the riper the fruit, the less added sugars.

So we’re really excited today because we will be making our first ebook edition available soon! Angel and I have really been gathering some new recipes and some old favorites and will be releasing ebook editions of each genre of food. Or we’re thinking we’re going to try. I’m sure it is a lot harder than we are anticipating, but if you don’t try, you’ll never know, right? We’re pretty excited about it. Look on our website and facebook soon for details!

Recipe: Paleo Berry Syrup

  • 1 cup Strawberries
  • ½ cup Blueberries
  • ½ cup Red Wine (see note below)
  • ½ tsp Lemongrass paste
  • 2 Tbsp Maple Syrup
  • ½ tsp Lemon Juice
  • ½ tsp Lime Juice

  • Hull and dice the strawberries, discarding the leafy tops. Halve the blueberries and add them to a saucepan with the strawberries. Add the red wine (or water if you are strict Paleo), lemongrass paste, maple syrup, lemon juice, and lime juice to the fruit in the saucepan and bring the ingredients to a boil.
  • Once boiling, turn the heat down to low (~3) and cook, uncovered, for 20-30 minutes or until you reach the desired consistency. NOTE: the longer you cook this, the thicker it will be. I like to take the syrup off the heat just slightly before it reaches its optimal consistency. As it cools, it will thicken just a little bit more, so to keep it from being gummy, keep that in mind.
