Paleo Chicken Fried “Rice”, A Chinese Food Inspired “Rice” Recipe

Let me start by saying that I love being Paleo…but sometimes, I miss the little extras from dinners. Maybe that is why I spend most of my time trying to figure out how to make them ;)

Anyways, this recipe is something that Angel loves. Being from PR, where they eat a TON of rice, I think he misses it sometimes. We make this when we want to do Ginger Shrimp, Beef and Broccoli or a different Stir Fry. You really can’t tell it’s cauliflower!

Paleo Chicken Fried “Rice”

1 head of Cauliflower, riced

3 Tbsp Sesame Oil

4 Green Onions, chopped

4 Tbsp Tamari (Wheat Free Soy Sauce) or Coconut Aminos (we use 2 Tbsp)

2 Eggs (depending on how much you like, we use 1 egg)

6 cloves Garlic, minced

2 tsp Chili Flakes

½ White Onion (you can use yellow also)

You may be wondering, ‘What does riced cauliflower mean’? Really, it just means to grate or chop the cauliflower very finely into rice-like pieces.

Once you have everything riced and chopped, heat the sesame oil over medium-high heat. Add the white onion, then garlic and cauliflower. Let it brown a little, then reduce the heat to medium and add the green onions, Tamari, and chili flakes.

Cook for about 2 minutes, then add the egg. I literally just crack the egg into the pan with the cauliflower and mix it around until it is cooked through.

Keep over medium heat until the cauliflower is the desired texture. The way we do ours, it takes about 6-7 minutes, uncovered.

**Optional: you can chop some water chestnuts very finely to give it a little crunchy texture. I’d use ½ of a can and I’d add it when I add the cauliflower.
