These Paleo Coconut Cream Pie Bars are made with Medjool dates, coconut shreds, almonds, coconut oil, vanilla extract and sweetened with raw honey. We came up with the recipe after eating Lara Bars. We liked them so much, we just had to have a version of our own. They are sweet snacks, with no preservatives or extras of any kind. They are raw, but they taste like baked goods, which we hardly ever eat now that we’re Paleo.
Paleo Coconut Cream Pie Bars
1 cup Medjool Dates (Angel likes more dates for a more candy-like taste)
1/2 cup unsweetened Coconut shreds
3/4 cup Almond slices
1 tsp Coconut Oil
1 tsp Vanilla Extract
1 tsp raw Honey
If I have extra time, I like to melt the honey in the coconut oil with the vanilla extract first. This blends the wet ingredients and makes sure that they are well incorporated.
Put the dates in a food processor and pulse until they are mostly chopped. Then add the shredded coconut, almond slices, and honey mixture. Pulse until all are well blended, but not pureed.
You can take a large handful and shape into a bar, but I like to smash it all down in a loaf pan lined with parchment paper (yes, use that loaf pan for good, not evil!) and pop it into the refrigerator. Once they are cold, they stick together much easier and will just pop right out of the pan (if you don’t use parchment, which I highly suggest for ease), making it super easy to wrap in foil for on the go. I wrap mine in tin foil or vacuum seal them, but plastic wrap or a ziplock bag will do just fine.
Store them in the refrigerator until you are ready to eat them.
