So I’m not sure about everyone, but if you are Paleo, there is a very good chance that you have heard of Lara Bars and we liked them so much we made our own Paleo Coconut Cream Pie Bars. They are great, sweet treats with no preservatives or extras of any kind. They are raw, but they taste like baked goods! Mmmm! Obviously, you can buy the bars at the store, but its more economical to make them at home. Enjoy!
Paleo Coconut Cream Pie Bars
1 cup Medjool Dates (Angel likes more dates for a more candy-like taste)
1/2 cup unsweetened Coconut
3/4 cup Almond slices
1 tsp Coconut Oil
1 tsp Vanilla Extract
1 tsp raw Honey
I like to melt the honey in the coconut oil with the vanilla extract first. This blends the wet ingredients and makes sure that they are incorporated.
Put the dates in a food processor and pulse until they are mostly chopped. Then add the shredded coconut, almond slices, and honey mixture. Pulse until all are well blended.
You can take a large handful and shape into a bar, but I like to smash it all down in a loaf pan lined with parchment paper (yes, use that loaf pan for good, not evil!) and pop it into the refrigerator. Once they are cold, they stick together much easier and will just pop right out of the pan (if you don’t use parchment, which I highly suggest for ease), making it super easy to wrap in foil for on the go. I wrap mine in tin foil, but plastic wrap will do just fine.
Store them in the refrigerator until you are ready to eat them.
