Sometimes, I like a snack. Or fast little sides that I can make for football season or holidays that everyone will enjoy. One of those family regulars are deviled eggs. These deviled eggs taste just like regular deviled eggs, even though they don’t include any pickles! I like to be sneaky about cooking Paleo for non-Paleo eaters…and THEN tell them once they try it and like it. ;)
I sometimes like to make this recipe for a snack, so I have 2 different measurements here – one for a small snack and one for a party. Hope you enjoy!
Paleo Deviled Eggs
Snack Size:
1 Tbsp Paleo Mayo
¼ tsp Minced Onion (dried)
1 Garlic clove (small, minced)
½ tsp Dijon Mustard (or any mustard you like)
1/8 tsp Dill
½ tsp Coconut Vinegar (or Apply Cider Vinegar if you do Vinegar)
Sea Salt and Pepper (to taste or a little less than 1/8 tsp apiece)
Smoked Paprika (to sprinkle on top, you can use regular Paprika, I just like the smoked)
Party Size:
3 Tbsp Paleo Mayo
¾ tsp Minced Onion (dried)
3 Garlic clove (small, minced)
1 ½ tsp Dijon Mustard (or any mustard you like)
¼ + 1/8 tsp Dill
1 ½ tsp Coconut Vinegar (or Apply Cider Vinegar if you do Vinegar)
Sea Salt and Pepper (to taste or about ¼ tsp apiece)
Smoked Paprika (to sprinkle on top, you can use regular Paprika, I just like the smoked)
Cut the hardboiled eggs in half. Scoop out the yolk (yellow part) into a bowl.
Add all other ingredients and mix together. Taste for sea salt and pepper. Season the rest of the way (to your liking or not at all!) and then scoop the mixture back into the halves.
Serve and enjoy with some of our other finger foods, like our Paleo Bacon Wraps, Caveman Kabobs and Thai Chicken Wings!
