Paleo Berry Syrup, A Vegan Fruit Topping

Today, we’re sharing our sweet & savory Paleo Berry Syrup recipe, which is perfect for Paleo Pancakes! This is really delicious over desserts as well. This recipe is naturally sweet, without hardly any added sugar. Keep in mind that the fruit needs to be ripe so that the fruit is sweeter. If you have slightly less than ripe fruit, you will need to add a little additional maple syrup to balance the tart flavor. So remember – the riper the fruit, the less added sugars.

Paleo Berry Syrup

1 cup Strawberries

½ cup Blueberries

½ cup Red Wine*

½ tsp Lemongrass paste

2 Tbsp Maple Syrup

½ tsp Lemon Juice

splash Lime Juice

Hull and dice the strawberries, discarding the leafy tops. Halve the blueberries and add them to a saucepan with the strawberries. Add the red wine (or juice or water), lemongrass paste, maple syrup, lemon juice, and lime juice to the fruit in the saucepan and bring the ingredients to a boil.

Once boiling, turn the heat down to low (~3) and cook, uncovered, for 20-30 minutes or until you reach the desired consistency. NOTE: the longer you cook this, the thicker it will be. I like to take the syrup off the heat just slightly before it reaches its optimal consistency. As it cools, it will thicken just a little bit more, so to keep it from being gummy, keep that in mind.
