This Paleo Eggs with Herbs recipe is an easy way to spice up a breakfast fast. I like to have a couple of these really fast, go to breakfast ideas for when I’m on the run and don’t have a lot of time to cook. If you like a little spicy, I suggest eating these with a nice hot sauce. And be patient…a good egg takes a little time. So give them time.
So tonight Angel and I are going to a concert at the Freebird to see Neon Trees. I’ve heard them live and I think that it’ll be a very good show. Angel has been singing their songs for the past week so much that I think I know all of the words by proximity! Anyway, usually we’re pretty much just homebodies during the week, but every now and again, its good to get out…so I’m excited.
Paleo Eggs with Herbs
¼ cup fresh Parsley
2 fresh Green Onions
Coconut Oil Spray
pinach Coarse Sea Salt & Black Pepper
Optional: Hot Sauce
OK. So when Angel wanted to buy the tiny little egg pans, I thought he was loosing it. But we all must pick and choose our battles, so I let him get them and thought they were the stupidest thing I’d ever seen. I have since been proven wrong. If you don’t own egg pans, then get them. They are great for even cooking! I really stuck my foot in my mouth on that one…and he knows it!
Anyway, take your pan and spray it down with oil. Heat the pan over medium (~4). Not medium high, medium. These will take about 10-15 minutes to do them perfectly. Once your pan is heated, add the egg and sprinkle with a pinch of coarse sea salt and fresh cracked black pepper. Then just sit and wait until the egg whites are cooked through and the translucency disappears. Again, I cannot stress the importance of lower heat. If you use too high of a heat, the bottom will be crispy and impossible to cut without a knife. And we don’t want that, now do we?
While the eggs are cooking, chop the parsley and green onions. Once the eggs are set up, sprinkle with herbs and serve!
