Paleo Mashed No-Tatoes, A Low-Carb Side

This recipe for Paleo Mashed No-Tatoes is an American staple for most. You’ll love this recipe because it tastes just like mashed potatoes, but without the extra carbs and starches and oh, its Paleo! Yay! You could use coconut milk too, either works just fine as long as they aren’t sweetened. NOTE: If you are steaming the cauliflower and have the basket, use it. If the cauliflower soaks up too much water, it will make these runny.

Well, it’s raining, again. Sigh. At least we got out to the beach yesterday. We took Chance and a new Frisbee and he was in heaven! I think he’s still tired from it! We also got the spare bed all cat-proofed, so they can no longer hide under there. Ah, feels good. Today, I finished up the garden with some trellises for our tomatoes in hopes that they will grow! I know it’s late in the season, but in Florida, you have more time to play with, as the sun is out all year.

Paleo Mashed No-Tatoes

1 head Cauliflower

¼ cup unsweetened Almond Milk

½ Tbsp Walnut Oil

Coarse Sea Salt and Black Pepper (to taste)

Trim the cauliflower, removing the stems. Steam the cauliflower with a little bit of sea salt and black pepper (usually a little water too – don’t add too much and if you have the basket, use it. If not, they can get a little runny). If I’m lazy, I will just put it in a ziplock bag and leave a 1” opening and microwave for 3-4 minutes.  If not, I’ll steam them over medium heat, covered, with ½ cup water (or a little less if the cauliflower head is small) until tender.

In a bowl, combine the cauliflower, almond milk, walnut oil, sea salt and black pepper to taste. I like to use a hand mixer, but you could use a blender or food processor too. Just blend it to a mash. Food processor = amazing texture.
