Paleo Sweet Potato Home Fries, A Breakfast Side with Herbs

This Paleo Sweet Potato Home Fries recipe is a favorite breakfast side in our house. It’s easy, fast, gives us energy and tastes great with anything. I recommend the hot sauce because it gives it a great dimension with the herbs. I like my sweet potatoes to be a little al dente, so if you like really squishy potatoes, leave them in for another 3 minutes. Enjoy!

So I’m super excited because I finally bought an online language course for the next year. I’m so ready to speak Spanish! Angel’s family understands English, but don’t speak much, so I’m excited to eventually be able to communicate. So in honor of my newly found educational expansion, I’ll be offering a word of the day in Spanish.

Today’s word:  la zanahoria (carrot)

Paleo Sweet Potato Home Fries

2 Sweet Potatoes

2 tsp Herbs de Provence

Coarse Sea Salt and Black Pepper (to taste)

2 Tbsp Olive Oil

Optional: 2 tsp Sriracha

Peel and dice the sweet potatoes into ½” squares. Toss the sweet potatoes with the herbs de provence, sea salt, pepper and sriracha (which is SO good if you haven’t tried it).

Heat the oil in a pan over medium-high heat. Add the sweet potatoes, turn the heat down to medium, cover, and cook for 15 minutes. You’ll want to shake or stir the pan, so the sweet potatoes don’t burn on one side.

This recipe is Vegan!

Serves 2-4
