Well, the stockings are hung and the tree is FINALLY up, thanks to Larry, Brandi’s dad. We had a great time today with her, Chase and her parents making burgers and talking. Tis the season for family…even if it isn’t your own, right? Good times.
This recipe is perfect for cold days, playing in the snow, or just a relaxing night at home with a good book. Its easy, fast and delicious. You can use the leftovers for ice cream too, which is always a nice bonus! I like to stir the boiling water in instead of heating over a burner because that way, I don’t have to worry about it boiling, but if you want to do it the other way, just watch it.
½ cup Cocoa Powder
¾ cup Coconut Crystals
1/8 tsp Sea Salt
1 tsp Vanilla
2 cups Coconut Milk
1 cup Boiling Water
You can actually do this recipe 2 ways:
Combine the cocoa, coconut crystals and sea salt and store in a container. When ready, add 2-3 Tbsp of the dry mix and pour 2-3 oz of boiling water over it. Stir to dissolve, then add 6oz coconut milk and a drop of vanilla.
The other way is how I make it if I have a group. Add the cocoa, coconut crystals and sea salt to a bowl. Whisk in the boiling water, then vanilla and coconut milk. If you feel that it is too thick or chocolately, you can always add more coconut milk or water, but we do this as a treat and I like it a little rich ;)
