Paleo Japanese Clear Soup, A Sushi-House Soup

This recipe for Japanese Clear Soup is based off my favor sushi-house soup. I’m been meaning to post this recipe for quite some time, but I just kept forgetting. Anyway, this soup is really light, but has a hearty flavor. I like it with our Paleo Japanese Cucumber Salad! You can add a variation to this by adding carrots and daikon strips, but I don’t. Paleo Japanese Clear Soup

3 cups Chicken Stock

1 ½ Tbsp Coconut Aminos

½ cup chopped Green Onions

1 Tbsp Sherry

½ cup Assorted Mushrooms

Coarse Sea Salt (to taste)

Bring the stock, sherry, lemon (if you are using it) and aminos to a boil. Turn the heat down to low, then add the green onions and mushrooms. Season with sea salt to taste.

Serve with our Paleo Japanese Cucumber Salad or a salad with our Paleo Japanese Ginger Dressing!
