Ready for the weekend! It’s been a crazy week since the family left. We’ve been working waaay too much, I haven’t even been able to make it to the gym this week! I’m going to be a complete lump tonight when I go back. Angel hasn’t gotten home before 10p all week and I’m ready for some relaxation with him this weekend. We need to catch up with each other!
The recipe was inspired by our garden – we’re not doing so great, but that’s because I have no ability to maintain or grow plants. That doesn’t mean I’m not trying! Anyway, I say that it inspires me because basil is the only thing in there that is really doing well. Flourishing. Beautiful. So here is a light summer dressing that really goes well with sweet fruit salads. We also use it as a marinade for chicken!
Lemon Basil Salad Dressing
¼ cup Extra Virgin Olive Oil
½ Tbsp Lemon Juice
½ Tbsp Lemon Zest
10 Basil Leaves (we use fresh from our garden!)
1 Tbsp Orange Juice
1 tsp Honey
pinch Sea Salt and Pepper
Combine all ingredients in a blender (or Bullet!) until smooth and incorporated.
Try it over our Summer Berry Salad!
